Got vegan friends or relatives visiting over the Christmas period? Stuck for ideas what to cook for them? These veggie fajitas are a tasty, easy, filling dinner that is affordable too! Here I used:
* 1 shop bought fajita kit
* 1 1/2 onion thinly sliced
* 2 bell peppers
* 1 head broccoli
* 1/2 small red cabbage shredded
* 1/4 butternut squash (left over roast)
* Sheese (soya cheese)
* Jalapeño (optional)
I threw the onion and peppers into olive oil on a high heat and seasoned with salt and pepper. Fry these for approx 8 mins – then add the broccoli and squash. After about 4 mins shake over the spice mix. Stir it all in & make sure it’s all covered. Heat the tortillas under the grill! Put everything into bowls and let your guests DIY! I serve the cabbage, jalapeños and Sheese raw to add extra textures.
Also delicious with baby corn, mangetout, sugar snaps or asparagus.
