When you get used to cooking more involved dishes, when you go back to basics you somehow develop them into something kinda special. This is mine and Sam’s go to recipe when there’s not much in the house…

INGREDIENTS

1 Garlic Bulb

A dozen or more cherry tomatoes

1 red bell pepper

1 red onion

Thyme

Rosemary

Olive Oil

Rigatoni Pasta (MUST be rigatoni – others trialled and tested)

 

🔆METHOD🔆

1. Heat oven to 200C

2. Slice bulb of garlic in half & chop the veggies into big chunks throw them into a big mixing bowl

3. Evenly cover in olive oil, salt, pepper and herbs and tip onto a baking sheet

4. Roast until the veggies get a nice colour on the top

5. Boil the rigatoni until cooked aldenti

6. Mix it all together with a little more olive oil, salt and pepper.

7. Serve 🍽
